Avg vine age: 30 years. The vineyards are located between the Jucar and Cabriel Rivers at an avg altitude of 700 meters on limestone/clay soils. Here the vineyards experience a push-pull between the cool, humid Poniente Wind from the Atlantic and the heat of the Levant Wind that comes from North Africa. The result is a large diurnal temperature fluctuation that favors slow ripening and perfect formation of the phenolics. All fruit is hand-harvested. Fermented in temp-control (24-28 Celsius) stainless steel for 15 days using native yeasts. Ageing in cement tanks before bottling.
