A sparkling wine made from a blend of Catarratto & Grillo. The grapes are hand-harvested, destemmed and fermented in cement vats for four months on the lees.
Separately macerated on the skins before blending and aging. Secondary fermentation kickstarted in bottle via added must. Undisgorged.
