In the cellar, Fossil & Fawn takes a minimalist approach: native fermentations, no additions or adjustments, aging in neutral oak, and no filtering or fining. The result is a lineup of wines that honor tradition while offering a fresh and distinctive take on the future of Oregon wine, executed with a natural approach that allows the vineyard to do the talking.
From organically farmed (non-certified, no systemic herbicides/pesticides) vineyards in the Willamette Valley - Finnigan Hill, No Clos Radio, Silvershot, Matteri, No Clos Radio, Marin Estate,and Rizzo. The vines range from 10 to 50 years old and are planted on marine sediment and windblown loess soils. The fruit begins fermentation with whole-cluster carbonic maceration - sealing bunches in vats that were left outside for four to six to experience natural diurnal fluctuations. The fruit is gradually pressed into stainless steel tanks and neutral oak where it finished fermentation over a six-month period. Bottled without fining or filtration.
