Averaging 20 years old, Valérie's vines are planted on clay-limestone soils in the heart of the Cher valley of the Touraine region in the Loire Valley. The grapes are hand harvested, destemmed and direct-pressed, with the juice cooled down immediately and settled naturally. Fermentation is spontaneous with indigenous yeasts in stainless steel and fiberglass vats, where it also ages on the lees.
