Stéphane Tissot took over the beautiful family estate from André and Mireille Tissot in 1990, and in over thirty years has accomplished a colossal task to reach the summit of the Jura and become a model far beyond the borders of France. After converting the entire vineyard to organic farming in 1999, the estate was certified biodynamic in 2004. This has been a relentless, honourable, unblemished career. Stéphane and his wife Bénédicte have never rested on their laurels – nor on their beautiful parcels of old vines, but have brought them to the top and made them shine through natural, sulphur-free winemakings and a wide range of cuvées: Crémant, vin jaunes, vin de paille, Macvin, maceration, amphora aging, etc. Myriad styles mastered for a complete range from powerful, precise, mineral whites to highly digestible, fruity reds. A flagship estate, awarded three stars by the Revue des Vins de France, which we are proud to present to you vintage after vintage.
A blend of 40% Trousseau, 30% Poulsard and 30% Pinot Noir from 35-year-old vines farmed biodynamically and planted on soils of limestone and Trias era clay. The vinification style brings to mind the first wines of André Tissot, nicknamed DD! The Trousseau and Poulsard grapes are destemmed by hand, followed by maceration in century-old casks for three months, whereas the Pinot Noir undergoes one month of whole bunch maceration. Bottled without fining, filtration, zero added sulphur.
