Super-Value! Sustainably-Farmed. 100% Pinot Noir from the Epineuil vineyard, planted by winemaker Marc Cameron (assistant winemaker at Domaine Servin Chablis) using uncloned vines from Volnay, Chambertin and Vougeot. The idea was small production but high quality. Vinification in up to 70% used Burgundian barrels. 100% destemmed, a cold soak for 5 days before the juice warms up naturally and the fermentation starts, the juice stays generally 12 days in contact with the skins, and is gently pumped over the skins daily. The skins are not pressed which prevents harsh tannins. The style of the wine is more elegant than bold and can be drunk young.
It's a tiny Burgundy appellation that still is a source of value! (The wine is delicious -loads of Burgundian pinot fruit!)
