Matchbook, it is part experimental, part mad scientist, part brilliant execution and the results are glorious. Another example of how this peerless distiller is pushing the envelope for what's possible in our drinks culture. Made from 1000lbs of second peaches, picked, and then boiled - yielding a sweet peach juice. Added some champagne yeast and fermented to an off dry peach wine before fortifying with peach leaf distillate.
