From Emilia-Romagna, this is Trebbiano Modenese & Trebbiano di Spagna (65% / 35%) hand-harvested from organically cultivated vines, destemmed and directly pressed upon arrival at the winery. The juices spontaneously ferment separately to full dryness. Blended, matured for a few months, and then bottled with a bit of its own unfermented juice to kickstart secondary fermentation in-bottle. Unfined, unfiltered, minimal added SO2.
