Hollotrio is a modern rendition of Austria’s most classic varietal. Weingut Familie Bauer farms biodynamically and vinifies this wine naturally. Hand-harvested, hand-sorted then de-stemmed before macerating 80% of the wine on the skins for 5 hours, and 20% of the grapes undergo maceration with the skins for 3 weeks.
