The Kabaj Homestead (pronounced kah-BYE) has been producing some of Slovenia's most prized wines since the early 1990s. The moderate climate in Goriška Brda, Slovenia delivers very balanced, dry, often skin contacted wine. This bottling is made with the indigenous variety of Rebula, known as Ribolla Gialla right across the border in Northern Italy. The grapes were fermented on the skins for 30 days with native yeast imparting a deeper orange hue and a moderate tannin. The wine is aged in French oak for 2 years and rests for another 6 months in bottle. There is a lively acidity with tangy fruit notes of canned peaches and prickly pear, finishing with a long and fresh herbal note. This is not an orange wine like most classify them today.
