This liqueur is made from pasilla mixe chiles from Oaxaca’s Sierra Norte region. The peppers are smoke-dried in clay and bamboo ovens then macerated in a sugarcane spirit for six to 12 months, after which the infused spirit is sweetened with raw cane sugar. A natural addition to spicy Margaritas, the bartender-favorite ingredient also adds rich, savory, earthy, fruit flavors to everything from Carajillos to Oaxaca Old-Fashioneds.
